Tofu scrambled with red onion, soy chorizo and mixed greens, (spinach, arugula, baby romaine) on a wheat pita.
This is somewhat hearty for breakfast, even for me. But just getting over an ear infection that hit me with flu like symptoms took a lot of energy to get over so quickly. My appetite is not even entirely back so I probably won't finish this meal, but I must get some calories, proteins, a few carbs and some electrolytes in. All which is included in what you see here.
About soy: I always say I'm not a big fan of soy, but I'm not completely against it either. For those who are challenged as it is to transition from or reduce their in take of animal products, soy is an acceptable food when used as supplemental or transitional. A regular diet of soy products is not suggested. I can go over the reasons I believe this at another time.
